Our work with Whitbread
Whitbread Plc is a UK based, multinational hotel, restaurant and coffee shop operation with a strong focus on customer experience. The restaurant division comprises Beefeater Grill, Brewers Fayre, Table Table, Taybarns and Whitbread Inns; the hotels division comprises Premier Inn.
THE PROBLEM
Whitbread has an extensive range of Food and Beverage (F&B) product lines, suppliers, and menu changes each year. A number of business processes, systems and projects including supply chain, menu modelling, recipe and dish management, site POS, site stock & Cook Books are dependent on this data being accurate. These systems and processes source their data from many places and often require the data to be manually rekeyed and manipulated. The result of this is data errors, poor decision making and time-consuming processes.
WHAT WE DID
We implemented Stibo Systems’ STEP platform to create a single source of auto populated master product F&B data.
Alongside this we provided a menu planning tool for recipe and dish costing as well as menu planning for different strategies.
Finally, we introduced a governed work flow process for data to gain the full value of these changes and ensure that the efficiency is maintained.
THE OUTCOME
The benefits of the solution are:
- An accurate food and beverage product single data source
- Eliminate the manual re-keying of data within the scope of the project
- Enable a more informed menu development process
- Ensure all food and beverage product information is complete and accurate throughout its lifecycle
- Provide accurate food and beverage data to the Site POS and stock solution (core site solution project).
- Provide complete food and beverage data (allergen, abv, calorie, nutritional) in order to facilitate compliance with Government standards. (EU 1169/2011)
